Creston Brewery Letter of Recommendation
"We had a business plan and a wealth of knowledge about beer, but we knew very little about building a commercial kitchen, creating a menu, and navigating our way through the health department requirements. We partnered with Culinary Cultivations and transformed an empty space into a state of the art kitchen producing made from scratch cuisine. The consultants at Culinary Cultivations provided top notch customer service and were responsive to our needs to ensure that the menu reflected our vision, not theirs. We'd work with them again in a second!!"
Creston Brewery - About
We are a group of individuals committed to working together to provide each person who steps through our doors with the best that we can give. From the beer to the food to the service, we want you to feel at home and we want you to feel appreciated. We want this consideration to go beyond our walls and we want to do what we can to better our community as well. Our focus is small because even the smallest things matter.
A letter of recommendation from Anna's House
I would like to take a moment to share my experiences with Culinary Cultivations and its owner Shawn Kohlhaas. As our company has grown very quickly in the last two years, Shawn has been there for us every step of the way. We have grown from one location with 75 seats, to having four locations in the West Michigan area. The largest with 198 seats. Shawn has helped us with a variety of projects to keep our expanding business organized and our managers on track with best practices for their locations. A few specific projects Shawn has helped us with are: Creating a portioning “Flashbook” for our Front and Back of house staff, executed training programs in-house with our managers, keeps all of our managers ServeSafe certified by enrolling them in their certification classes, if not running the classes himself and generally helping us with any possible need or question you could think of. Shawn has been particularly helpful to me, as a growing District Manager. If I am ever in “crisis mode”, I know I can count on him with support or answers to any questions I may have regarding the food and beverage industry. On a personal level, he is a real joy to work with and I always look forward to our projects."

A letter of recommendation from Brewery Vivant
What a blessing it is to have such great colleagues in such a cutthroat business. Culinary Cultivations and Shawn himself have been great help to myself and my company. When I reach out for help I know I'll have a trusted company that has my back.
Celebrated as the first LEED certified commercial micro brewery in the world, Brewery Vivant is housed in a refurbished historic funeral home. The pub harkens back to an old world monastery where monks brewed Belgian beer. Come live the Bon Vivant with us-- enjoying Belgian and French inspired beers alongside European inspired fare from our scratch-kitchen.
We are excited to share our passion for beer, food and sustainability with you. Much of the inspiration behind Vivant comes from the small breweries that dot the countryside in Southern Belgium and Northern France. Many of those breweries are true beer artisans who are also an integral part of their community. They experiment with unique yeasts and ingredients, always with an artistic eye to their creations. They source a lot of items locally which makes their beer pair exceptionally well with the food they harvest locally. These family businesses often wear many hats besides brewer, including educator, visitor guide, and even town mayor. Though we don’t aspire to be the mayor of Grand Rapids, it is important to us to be more than just a manufacturer of great beer (although that is our first passion). We see ourselves synonomous with the flavor of what makes our city great. Explore our website and start planning your trip to 925 Cherry Street. We'd love to see you down at the pub. Cheers!

"THANK YOU so very much for all your support in making our daughter's graduation party a complete success. Steve, you absolutely executed my vision and exceeded our expectations. When the kids say it was by far the best food at any grad party (and when they end up sitting around for over an hour eating), you know it was a home run. Shawn, I will absolutely contact you for future events (feel free to send Steve our way again :)). "

HopCat was envisioned, designed, stocked, and staffed with one mission in mind: To bring you great beer. What is great beer? It's a beer made with care and pride. It might be a local beer or one from across the globe. It could be your usual pint, or a beer that you had no idea existed. Every once in a while, it's a beer you never would have ordered but for the fact that your server or bartender suggested it.
Since opening our Grand Rapids location in January 2008, we've been on an unending quest to ensure that our beer selection is the best in the world. We’re listed as one of the Top 50 bars in the US by Draft Magazine. But that’s just the start: Beer Advocate Magazine has ranked us as the #3 Beer Bar in the world, CraftBeer.com has rated us the #2 beer bar in the U.S., and in 2012 and 2013 RateBeer.com ranked HopCat - Grand Rapids as the #1 Brewpub in the United States. We’re humbled by the response that craft beer lovers all over the world have shown to our philosophy, and are truly grateful for the simple fact that we are lucky enough to be located in the Midwest, where craft beer is way of life.
At our East Lansing location, we’ve expanded on that philosophy and pushed the limits of beer bars: We have 100 draft beers—all craft, no crap. The readers of Mlive and Lansing City Pulse responded by awarding HopCat - East Lansing Top of the Town awards for "Best New Restaurant," "Best Fries" and "Best Place for Craft Beer."
HopCat - Broad Ripple, our first location outside of Michigan, adopts many of the traits that made HopCat a success in Michigan. In Indianapolis we've embraced lndiana's great brewers while also providing a showcase for some of its up-and-coming stars. With Indiana's largest draft selection - 130 taps - we see HopCat - Broad Ripple as both a neighborhood gathering spot and a magnet for craft beer lovers.
We specialize in offering a wide range of regional, global, and Belgian beers. If you're not in the mood for a beer, you can get a glass of wine or a cocktail from our full bar.

THE SHORT’S STORY BEGAN IN 2002 when a 22-year-old brewer named Joe Short registered Short’s Brewing Company as a business in the state of Michigan. Having already gained significant brewing experience at other Michigan breweries, Joe realized that his style of brewing was best suited to his own business model where he would not have to answer to anyone for putting lots (and lots) of the best possible ingredients into his brews, or for brewing specialty beers that some might consider outrageous. Joe wanted to brew bold, flavorful and extremely creative beer, and felt that people would travel out of the way to get them.
Renovation of the 120-year-old hardware store began in January 2003 when Joe and several friends and volunteers began renovating and restoring the building to what it is today. All the craftsmanship was done by Joe, friends and volunteers, from the trim mold to the bar, right down to the mosaic tile Short’s logo near the pub entrance. The logo mosaic took four people three straight days to complete. The brewing equipment was purchased used. The original seven barrel pub brewing system came with five fermenters and five serving tanks. Many roadblocks and challenges threatened to cancel the project. However, with hard work, determination and many good people lending a hand, the project was finally completed after 18 months. The pub opened its doors on April 26, 2004.
Of building the pub, Joe said: “Words cannot describe the heartache, stress, losses, physical and mental fatigue, and great rewards experienced throughout the struggle to bring the Short’s Brewing Company project to fruition. It is real, and remains real, because we believe in what we do and always have. Short’s is and has been supported by the immediate community and the brewing industry. Short’s Brewing Company is gaining popularity and is highly regarded among the brewing industry for its innovative brewing and tenacity to beat all odds that oppose its inevitable success.”
Though the business got off to a slow start, things began to turn around when Joe’s girlfriend (now wife) Leah joined the team in 2005. Leah managed the deli and took responsibility for the creation of our delicious food menu. This gave Joe more time to concentrate on the brewery and business side of things. Soon after, Scott Newman-Bale, a.k.a. the Magician joined the team, and with his help projects, such as the 2007 Imperial Beer Series, were financed and the brewery finally became a profitable business.
Short’s purchased an old manufacturing building in Elk Rapids in January of 2008. After a year of intense research, fundraising and sweat equity, we were able to design, construct and assemble everything to brew our first Elk Rapids batch of beer in January 2009. When the first production batch shipped in March of 2009, every bottle on the truck was labeled by hand. We bought a labeler with the proceeds of our first shipment, and that labeler still labels every bottle that goes out the door. We have since continued to fund our growth based on our past sales to continue to meet the statewide demand for our beer.
Today Short’s Brewing Company continues its efforts to make the best beer on earth in Northern Michigan. Although we have quickly grown to be one of Michigan’s largest breweries, we still take pride in our hands-on, mom-and-pop approach and the energy we put into the quality of our beer, food, staff, customers and facilities. We still brew our beer the same way we always have and we always will. We believe in “the power of the smallness,” and intend on remaining a Michigan-only brewery. Our goal is to get to a comfortable production volume, love what we do and enjoy life in Northern Michigan.
Short’s celebrated its 10th Anniversary on April 26th 2014. It is still owned and operated by Joe and Leah Short. Our success is based on their hard work, sacrifice and direction. To celebrate this hard work and passion, a short film was produced by Eleven35 Productions to richly communicate the character and personality of Short’s, their beer, and their founders.
BarFly Ventures, a hospitality group, began in 2008 with HopCat, an award-winning brew pub in the heart of downtown Grand Rapids. Stella’s Lounge and McFadden’s Irish Pub joined the Barfly family soon after. In December 2012, BarFly brought The Grand Rapids Brewing Company to downtown Grand Rapids. Located at 1 Ionia, Grand Rapids Brewing Company holds the distinction of being Michigan’s first USDA Certified Organic brewery. The BarFly family continues to grow, with HopCat expanding into East Lansing, Indianapolis, Detroit, Ann Arbor, and several other Mid West cities.
Sustainable practices are notoriously difficult to implement in the service industry. All Barfly establishments proudly work toward becoming more sustainable in every way, all while creating spectacular and memorable experiences for every one of our guests. Currently, less than ten percent of Barfly businesses’ waste ends up in a landfill, thanks to our commitment to recycling and composting through local vendors and facilities. All of our food waste, spent grain, take-out containers, straws, disposable cups, and paper waste is currently composted, and turned back into new soil for local farmers.
On an individual level, Grand Rapids Brewing Company is proud to be the Michigan’s first USDA-certified organic brewery—but the entire brewery was designed from the ground up keeping our environmental impact in mind. A number of old architectural elements in the original space at 1 Ionia were reused throughout the building: Floor joists from 1886 became our tables, old fire suppression system pipes were transformed into furniture legs, and nearly all the brick that was removed in the renovation was put to use throughout the space, among other efforts. In an effort to reduce our carbon emissions, our brewery is powered mostly by city steam instead of fossil-based fuels. Our beer has also made us part of the local organic community—we use almost 90 percent of Michigan’s organic hops supply.
As an organization, Barfly actively supports local charitable and environmental causes. Most recently, we have begun to support clean water initiatives in West Michigan: water is not only central to our survival, it is also the most important ingredient in our food and beer. Our No Fracking Way collaboration beer, scheduled to release in early April 2014, has already united many West Michigan breweries in a show of support for protecting our lakes, rivers, and water supply.
Throughout our expansion, our mission has remained the same. We care about the environment and the world around us, we treat each other like a family, offer a unique dining and drinking experience, and make sure each and every guest feels important. By doing these things, we help not just others, but ourselves. Without doing all these things, we disappoint not just others, but ourselves.

Situated in a beautiful 1931 red brick building, Rare Bird’s mission is to provide an unsurpassed dining and drinking experience in Traverse City. From our intimate reclaimed wood booths to the cozy and cool lounge and German bier hall style seating made from massive wood slabs that Nate and Tina sustainably harvested, we have a space for everyone to feel comfortable. The food menu features simple, familiar items served with a unique and exciting flair. Our ingredients are sourced locally when possible. Keeping with the local theme, our beer ingredients includes malt and hops grown in Michigan whenever possible. All of these qualities together make Rare Bird stand out in the crowd.
Tina is originally from Wisconsin and discovered her love for great beer while living in Germany. A friend taught her how to brew while she was studying Biology at the University of Wisconsin- Stevens Point and it became her favorite hobby. She brewed part time while she worked as a park ranger in California and New Zealand and while doing children’s health research. But before long, she gave into her love of brewing and beer, making it her full-time job. It was that career choice that eventually led her to Traverse City, MI.
Sneaking in some birding in Cape May, NJ Sneaking in some birding in Cape May, NJ
Nate is a Traverse City native son, born and raised here. He spent his days tromping around the area catching fish, chasing reptiles and watching birds. His infatuation with birds didn’t die down when he went off to school at Michigan State for his business degree. Nate returned home after college determined to make northern Michigan his permanent home. His birding status grew and he became a force in the birding community up here known as Bird Man to some. After a few years of working in the corporate world, he threw caution to the wind and began his quest to open his own brewery. He made a name for himself in Traverse City’s craft beer scene over the course of several years, but his dream really started looking like it might turn into a reality when he met Tina in the fall of 2011.
Nate and Tina met at a local brewery where he was a bar manager and she came in to brew. Nate’s first words to Tina before even saying hi or introducing himself were “Is it true you banded kiwis in New Zealand??” We have found rare birds and great beer to be our common ground. We quickly discovered that we shared rare birds and great beer as our common passions. With more than 13 years of experience between us and a genuine love for beer, we know Rare Bird Brewpub is an experience unlike any other in northern Michigan.

The Sicilian family traditions began several years before Lisa and Gianni were even born in a town called Montelepre, Sicily. Population of around 6,200 people where ironically both of their grand parents are from. Their roots started there and have traveled to Grand Rapids where they reside today. Gianni & Lisa met at Central Michigan University in front of the bookstore in 2000.
After Gianni graduated in December of 2002 he pursued a career in sales and landed his first gig at Enterprise-Rent-A-Car. Lisa was finishing up her degree in Business and apparel merchandising and graduated shortly after. Immediately after graduation, Lisa began cosmetology school. They were bound to get married but Gianni played the “five year plan” even though he knew he wouldn’t find any better than Lisa. In 2005 they married and moved to a small house off of Knapp and Dean lake. They instantly fell in love with the rapidly growing area and set out for several vacations before having children.
Gianni pursued pharmaceutical sales and Lisa began a consistent career at AJ Pinder & Co. where she still makes magic happen Mondays, Thursdays, Fridays and an every other Saturday. Since 2005 several things happened including a new home and two beautiful children named Gianna (3) and Nico(2). At 13 months apart, Lisa and Gianni have tried to keep up with the demands of being parents, partners, providers, and now business owners.
Gianni is going on 10 years of corporate life and is finally ready to pursue his dream. After several conversations with Lisa about pursuing a restaurant career Lisa finally agreed that it was time. What makes a restaurant different these days and where do you go with so many options?
Gianni will always tell you that it doesn’t get any better than mom’s house. He has been spoiled with traditional dishes all his life so you can’t blame him. Anytime you go to Mamma Licari’s you get put into a food coma and walk out with a to go container, and by marrying a Sicilian girl, the coma continues. The main reason Gianni wanted to pursue a career in the food business was because he really wanted to showcase his mother’s recipes. He wants everyone else to experience what he got everyday growing up and still today from Lisa. Gianni has his own experience working for family and friends in the business but always wanted do it for himself and his family. Several chains do it well but not many places offer a fantastic plate of fresh pasta or pizza. They want to show the community that Sicilian food is different from Italian in many ways.
We are creating a casual, energetic, and affordable neighborhood pizza kitchen conveniently located in Celedon New Town next to the Crushed Grape. It’s airy, easy-going, and our spin on the Sicilian food is as delicious as the atmosphere. Claim a spot in our restaurant and order up some serious pizza, relax with a glass of wine, or perhaps with a bottle of wine from our reasonably priced wine list.
On January 1, 1893 six local breweries joined forces and opened Grand Rapids Brewing Co.
Over the next two decades, they built a monumental brewery at the corner of Michigan Street and Ionia Avenue, what is now the site of a state office building. Capitalizing on the location’s ample supply of fresh spring water and a refreshingly drinkable flagship beer, Silver Foam, GRBC became one of Midwest’s largest and best-known breweries.
In 1920, Prohibition brought that success story to a crashing halt. When the bans on alcohol production and sales were lifted, GRBC merged with several other breweries and eventually left town.
In 2012, Mark Sellers, founder of BarFly Ventures and owner of three other area bars, brought Grand Rapids Brewing Co. back to downtown Grand Rapids, just 6 blocks from its original location. Today’s Grand Rapids Brewing Company opened on December 5, 2012, 79 years to the day after the repeal of Prohibition.
Today, we pride ourselves on being the first USDA-certified organic brewery in the Midwest. The beer we produce includes a recreation of the iconic Silver Foam, along with several other beers brewed to honor our Grand Rapids heritage, leaders, landmarks as well as our Grand Rapids Brewing Company family.
Sustainability is at the heart of what we do as a company. We built our brewpub to reflect that value. Reclaimed materials were used for our floors, tables and walls and we employed local artisans to create our furnishings and artwork. We also employ an extensive recycling and composting program, helping us divert more than 90 percent of GRBC’s waste from landfills and incinerators.
We hope that you are as excited to experience Grand Rapids Brewing Company, as we are to provide this experience for you.

We have been a pioneer in the craft beer industry since opening our original Arbor Brewing Company Pub and Eatery in downtown Ann Arbor, MI in July of 1995. Our commitment to handcrafted beer, exceptional hospitality, local sourcing, community involvement, and environmental stewardship has been the foundation for our growth and success for nearly two decades.
ABC was founded by husband and wife team Matt and Rene Greff who share a passion for beer and adventure. By their late 20s the Greffs had become disenchanted with their corporate gigs and soon after brewpubs were legalized in Michigan, they set about opening their own brewery. They raised their startup capital through a network of friends, family, and co-workers and became the first brewpub to open in Ann Arbor and the fifth to open in Michigan’s fledgling microbrewery movement.
Somehow we survived the trials and tribulations of our first few rocky years in business and by 2001 we had maxed out capacity on our 7 bbl system and were looking for ways to add new tanks. Fortune was on our side when an adjacent building became available and we set about expanding our operations with the addition of a small banquet space, an additional 30 bbls of fermentation and serving tank capacity.
We arrived as freshmen at the University of Michigan in 2009. Throughout college we both loved everything Ann Arbor had to offer. Before Salads UP, neither of us had any restaurant experience. All we knew was that Ann Arbor was in need of a new destination for delicious and healthy food and we were the guys to make it happen. It was a challenge as restaurant-rookies but we are thrilled to add something new and special to the Ann Arbor community. We really hope you enjoy! GO BLUE!.
Our Chef Felicia is the creative mind behind our menu. She has over a decade of experience in the restaurant industry and we are very lucky to have her on our team!. Felicia is originally from the Rio Grand Valley. She first graduated from Texas A&M and is a diehard Aggies fan. Since A&M she went on to study at the prestigious Le Cordon Bleu Academy where she refined her love for cooking. Felicia has worked for Wolfgang Puck catering in Hollywood, apprenticed with NYC celebrity chef Sue Torres, catered in Houston where she cooked for George Bush senior and opened a restaurant tavern in Pennsylvania. Felica’s Favorite Salad is Saddle UP

Stella's Is For You (And Us)
Stella's is open 4 p.m.-2 a.m. Monday-Thursday and 11 a.m.-2 a.m. Friday, Saturday and Sunday.
Our menu goes way beyond the typical freezer bag to fryer crap you find at a lot of bars. Our famous giant stuffed burgers were named Best in America by GQ in 2012 and Best in Grand Rapids by Grand Rapids Magazine and On the Town. We even make our own vegetarian and vegan burgers, beer-battered avocados and stuffed tots.
We also have over 250 kinds of whiskey for your sipping pleasure. Canadian, Scotch, Irish, American (including some Michigan-made varieties) -- we cover the map.
We have all the vintage arcade games you (or your parents) skipped 6th period to play -- Galaga, Ms. Pac-Man, Mortal Kombat, Donkey Kong, Tron and Q*bert to name a few. They're still just 25 cents to play.
We play rock music that changes when our mood changes. Sometimes you might hear Lionel Richie, Johnny Cash and AC/DC in the same visit. It's a beautiful thing.
We have assembled an amazing staff to care for your every need - if you want something, ask nicely (manners are important, yo!) and they'll hook you up.
Stella's Is A Bar.
Minors are welcome with a parent until 10. Please note that the arcade games are not babysitters - if we see kids alone and beating on Galaga in the arcade, they will be given 2 Red Bulls and an airhorn to take home.
We want you to have a great time - we also want you to keep it together. If you need a cab, ask us to call you one, please and thank you.
We're open from 4 p.m. - 2 a.m. Monday through Thursday and 11 a.m. to 2 a.m. Friday through Sunday. The kitchen closes up at 1 a.m. every night of the week. If you're still gonna be hungry after that, you should've brought a granola bar - it pays to plan ahead.
Happy Hour at Stella's runs from 4-6 p.m. Monday-Friday and 2-6 Saturday and Sunday. Ask about our daily specials or look at the chalkboard behind the bar.
The soup of the day is whiskey, no crackers.
Stella's Hates Trash
We recycle. We compost. We buy products that help us do that stuff -- special straws, napkins and whatnot. We make sure more than 90 percent of the waste we generate doesn't end up in a landfill or incinerator. We even package your leftovers and takeout in compostable to-go containers so you can feed your roommate and then feed worms with the box.
We're Stella's Lounge. Come check us out.
A Growing Farm. A Growing Family.
Brothers John and Jim King, along with their wives Betsy and Rose and their children, have been growing fruit in Northern Michigan since 1980, specializing in Montmorency tart cherries. We are a first-generation farming family growing into the second. We love the farming life and work hard to grow quality fruit.
We actively grow over 180 acres of Montmorency tart cherries which we use for our tart cherry juice concentrate, in addition to Balaton cherries, black sweet cherries, apples, peaches, pears, apricots, plums and nectarines. Our orchards are located in the heart of Michigan’s famed cherry growing region, atop glacier-formed ridges and rolling hills near Torch Lake and Lake Michigan’s Grand Traverse Bay. Just 35 minutes north of Traverse City and 45 minutes south of Petoskey, our two farm markets offer convenient locations for the majority of Northern Michigan travelers and residents. The quality of our harvest is second to none. We pride ourselves in orchards that are pruned and maintained specifically for pick your own fruit. Click here to learn more about picking fruit at King Orchards. We ship apples directly to your door during peak season along with shipping Montmorency tart cherry juice year ’round!
Our Commitment: When you buy from us, you benefit from a strong commitment that goes far beyond a pleasant voice on the telephone or a slick, four-color catalog. As growers, we are stewards of the land and active in our rural community. Our investment begins long before a label is put on a product or an order is processed. We are tart cherry growers with over 100 acres of Montmorency trees, and a lifetime of experience and dedication to the future of tart cherries.
We are a community restaurant; a family farm-owned establishment that aims to nourish the community with ‘real food’ in an inspired setting at good value. We serve vegetables and fruits; free-range, grass-fed, hormone-free, and antibiotic-free meats; all-natural cheeses, spices, oils, grains, flours, nuts, seeds; and artisanal breads all sourced as locally and as organically as possible. We create seasonal dishes and special seasonal items on our menu. Buying local helps to build a sustainable community food system, which can improve the health of the community and the natural environment.
By partnering with local artisans and working with sustainable farmers, we're returning to an old-fashioned emphasis on quality. It’s tastier, it's better for you, and it makes us feel good! We respect our customers’ dietary preferences and nutritional goals.
In seeking just the right ambiance for the 84th Street Pub & Grille, Dan Pfeiffer and Bill Van Dyk visited pubs and sports bars around the area.
“We found good ideas and put the best ideas all in one,” said Pfeiffer, who owns the restaurant that opened Friday, September 10, 2010 at 8282 Pfeiffer Farms Drive.
Pfeiffer, a longtime auto dealer, and Van Dyk, former chief financial officer of Pfeiffer Automotive Group, said they aimed for a casual, family friendly pub with an affordable menu.
Menu highlights include hand-dipped onion rings and dill pickles, 19 beers on tap, pizzas, the whopping Burger 84 that can feed a family for $22.99, soups, sandwiches, wraps and desserts. The newly acquired liquor license allows for a full bar.
“I think the community is ready for a place like this,” Van Dyk said. “Hopefully, we’re just going to be a great neighborhood pub, where you will want to bring your wife as well as your buddy.”
Building renovations include a new green, gold, red and brown exterior, an outdoor deck that seats more than 50, and a gazebo for smokers. The interior features a large central bar, several flat-screen TVs, and seating for 210.
The building, visible from U.S. 131, connects with Baymont Inn, and guests can order room service from the restaurant. “(The exterior) really becomes our billboard, and it shows so nice from the highway,” Van Dyk said.
Cultured Love was founded in 2014 by Jodie and Paul Krumpe and operates out of Grand Rapids, MI. The company grew out of their passion for and curiosity about the intersections between food, nutrition and well-being. Their interest in “food as medicine” expanded when several family members contracted Lyme Disease. This led Jodie to research chronic illness and the value that good food can add to a person’s health. They realized there was a lack of healing foods available to them and their families and decided to create a solution.
We at Cultured Love now want to share that solution with others and spread the word that what we eat has a significant impact on our overall well-being. We “make good food good by producing nutrient-rich, probiotic-laden foods that are not only beneficial for you, but also have amazing flavor and texture and add beauty to any meal. Our hope is that through our hand-crafted foods, healthy products, and informative education, we can help you culture a little more love in your life.
We aside the owners in Cultured Love with their original concept and help generate ideas for packaging, manufacturing and distribution.
